cold maceration for 8 hours, fermentation at 18°C in barriques used for at least 10 years, “champenoise method” at 12°C.
36 months on its own yeast in the bottle.
Rosy colour, fine and lasting taste, with a bouquet of Nebbiolo grapes, raspberries, violets, bread crust and yeast, very dry (sugar 6 g/l), sweet tannin, well-balanced with a long after taste.
perfect as an aperitif, goes well with all plates except sweets.
