Production area: Canale d’Alba – Roero.
Vinification: maceration on the skins for 6-8 days;
frequent délestages and punching down;
final alcoholic fermentation in barriques.
Ageing: in barriques (60% of them new)
for 18 months; blending in stainless steel vats.
Colour: ruby red.
Bouquet: hints of red fruits, coffee, tobacco, cacao, black pepper and wood.
Taste: full body, deep and concentrated, with good balance of wood and fruit.
Pairings: meat dishes, ripe cheese.
