GRAPE VARIETY: 100% Merlot
VINIFICATION: destemming followed by 14 days macerating with the grape skin. After racking the wine is matured for 14 months in Allier oak casks.
FERMENTATION EQUIPMENT: stainless steel fermenters.
COLOUR: ruby red compact.
NOSE: elegant hints of black currant, ripe plum and candied violets. Mild emerge balsamic hint and medicinal herbs.
PALATE: large and dense texture, vibrant. The tannins are rendered docile by the structure and considerable verve. Interminable final.
FOOD MATCHING: excellent with strongly flavoured mature cheeses and meat.
